DISTINGUISHED BEANS
Reviewing the best in craft chocolate
Chapon

Venezuela Chauo 74%
Aroma: mild and nutty
Flavor: A delicate burst of citrus with just a little acidity, a hint of red fruit, and notes of cream, cream biscuits, honey, and flowers. The tiny crystals of Guérande salt are pleasant, and used sparingly enough not to compete with this very delicate cacao.
Recommendation: Overall, this bar showcases a distinctive Venezuela criollo flavor, and the beans are clearly carefully handled and not over-roasted. Recommended. If you’ve had this bar and liked it, make sure to try Domori’s line of criollo cacao.
Batch info: best by April 2021; Lot no. 195245
